Pumpkin Chili

Last night I made Pumpkin chili for my family. I was a little skeptical about trying this new recipe because pumpkin is not an ingredient normally used to make chili but it turned out fabulous and I look forward to making this again.


Ingredients:

2 lbs ground beef
1 t crushed red pepper
1 t minced garlic
1 med white onion chopped
1 green bell pepper chopped
1 red bell pepper chopped
1 yellow bell pepper chopped
2 cans kidney beans with juices
2 cans black beans with juices
1 can Rotel with juice
1 can diced tomato with juice
1 can fire roasted tomatoes with juice
1 can pumpkin puree
2 t pumpkin pie spice
3 t chili powder
1 t ground cumin

Directions:

Brown the ground beef in a pan then drain grease. In a large crock pot or a large pot add remaining ingredients and let cook for two hours. I have five children living at home so you may have to adjust the ingredients to fit your family size.
